Another cold lunch meal prep for the week! this meal is protein packed, so fresh and very filling 🥬🌶🦃 Ingredients:
•1 lb of ground turkey •1/2 onion
•2 cloves of garlic •paprika •cumin
•4 bell peppers diced •2 cans of black beans (drained and rinsed) •1 jalapeño sliced thinly •1 lime
•1 can of chickpeas (drained and rinsed)
•1/2 bunch of cilantro •1/2 a jalapeño •1 lime •2 tablespoons of olive oil
•4 tablespoons of water
•salt and pepper
makes about 4-5 servings
1. sauté onion and garlic until slightly golden then add ground turkey, season with garlic powder, onion powder, cumin, paprika, cayenne, salt and pepper.
2. blend chickpeas, cilantro, jalapeño, juice of 1 lime, olive oil, garlic powder, onion powder, cayenne, water, salt and pepper to taste.
3. arrange arugula, spinach, lettuce on a plate/bowl then add a 1/4 of ground turkey, 1/2 a can of beans, 1 diced bell pepper, 1 to 2 tablespoons of hummus dressing, some thinly sliced jalapeño and a quarter of a lime.
