Gingerbread cake with a cream cheese frosting 🎄🌟🥰 ——————— INGREDIENTS 🌟Cake • 2C oats (blended into flour) • 1/3C almond meal • ginger powder • nutmeg • cinnamon • baking powder • 1/4C coconut oil • 1/4C agave (or sweetener of choice) • 1C almond milk • 1 egg 🌟Icing • 200G cream cheese • 50G greek yoghurt • 1tbsp stevia • 1tbsp maple syrup • 1tsp vanilla extract • 1/4C crushed almonds METHOD 1. Add all dry ingredients in a bowl and mix 2. Add wet ingredients and stir until all combined 3. Place in a lined baking tray and bake @ 180°C for around 25mins 4. To make icing place ingredients in an electric mixer until mixture is smooth and creamy 5. Once cake has cooled, spread icing on top and add crushed almonds 6. Baked Ziti, Tator Tots, and Baby Bok Choy Salad😋 For the baked ziti, I just made the noodles, drained them, put then back in the pot with mozzarella cheese and marinara sauce, add a few spices, then in a pan with more sprinkled mozzarella cheese on top, then in the toaster on 450° F until crispy on top. Tator Tots were from the freezer, added salt, pepper, garlic powder, Paprica, and put in the toaster on 450° for about a half hour until crispy (flip them occasionally). I added romaine lettuce to this salad and left out the scallions (we don’t really like them lol) *Culinaryhill.com* FOR THE SESAME DRESSING: ¼ cup light brown sugar ¼ cup olive oil 2 tablespoons red wine vinegar 2 tablespoons toasted sesame seeds (see notes) 1 tablespoon soy sauce FOR THE BABY BOK CHOY SALAD: 2 tablespoons olive oil 1 package ramen noodles crumbled, seasoning packet discarded ¼ cup sliced almonds 1 bunch baby bok choy sliced (5 – 6 bulbs) 5 scallions chopped NOTES: 1. To make the dressing, in a small bowl or in a jar with a tight-fitting lid, combine brown sugar, olive oil, vinegar, sesame seeds, and soy sauce. Allow flavors to blend at room temperature while preparing the rest of the salad. 2. Meanwhile, heat 2 tablespoons olive oil in a large sauce pan over medium heat until shimmering. Reduce heat to low. Add ramen noodles and almonds; sauté until toasted, about 10 minutes, stirring frequently to avoid scorching. 3. In a large bowl, combine baby bok choy, scallions, and crunchy mix. Drizzle salad dressing over the top and toss until uniformly combined. Veggie Packed Tofu Noodles . . Its starting to feel a lot colder outside, and what sounds better than a nice steaming bowl of noodles and vegetables to warm you up al the while keeping you on track to meet your goals? This tofu rice noodle recipe makes 8 meals and will satisfy your craving unhealthy takeout! . . Ingredients 🍝Asian rice noodles 🍈olive oil 🥦broccoli 🥕shredded carrots 🥬bean sprouts 🥚white onion 🥚fresh garlic 🌶green pepper 🍞tofu 🥫sriracha, stir fry sauce, soy sauce, 🧂black pepper, red pepper flakes, sesame seeds, ground ginger. . . Instructions ➡️First step, boil water with salt and put your noodles in for however long the packaging says ➡️Then heat a pan, put oil in, throw your diced tofu in, add crushed red pepper flakes and black pepper, then sauté until its crisp. ➡️Once it’s crispy, take it out and put it on a paper towel to get out any excess oil. Once noodles are done, set aside and wipe wok off, then add more olive oil. ➡️Throw your onions, garlic, shredded carrots in and saute for a min. ➡️Then add bean sprouts, and saute for two mins, then add green pepper and ginger. ➡️Add broccoli and continue sautéing. Noodle soup szn 🍜 It’s been cold and rainy here so soup needed to happen ASAP 😌 Super simple and non fancy, exactly what I can handle on a Tuesday 😅. — This is a play on my grandma’s spring (summer??) rolls w/ boiled pork + rice noodles. She seasoned her pork with toasted rice powder and made a tasty soup with the leftover liquid. We would eat tons of rolls then drink the broth afterwards or make noodle soups with it ☺️. Thinking maybe I need to make this exactly how she did?? 🤔 Yay or nay? 🙋🏻‍♀️. — Vermicelli rice noodle soup with pork, baby bok choy, cilantro, scallions + spicy garlic fish sauce for dipping 🍜🍖🥬🌶 #diningwithdiana. — For the broth 3 lbs pork bones (found mine @wholefoods) 2 @sprouts bone in pork chops 1 @calorganicfarms large onion, peeled & halved Kosher salt, to taste Sugar, to taste 6qt water — Bring some water to a boil. Blanch the bones and meat to remove scum, about 10 mins. Rinse bones well and add to clean pot. Add onion and 6qt water along with salt and sugar. Bring to a boil. Reduce to a simmer. Simmer pork chops for 15 mins and remove. Simmer the bones for 2 hours. Adjust seasonings as needed. My Collagen Protein Loaded Potato Soup is a hearty, family size recipe that not only fills those tummies, but adds a healthy dose of collagen protein! INGREDIENTS: 2 bags 24oz red baby potatoes 8 cups no salt added chicken stock 1 package low sodium hickory smoked bacon 1 white onion 6 garlic cloves 6 TBS real organic butter or ghee 1 cup unbleached flour 4 scoops bulletproof unflavored collagen protein powder 2 cups sharp cheddar cheese 1 cup sour cream 1 /2 cup cream Green onions Salt & pepper DIRECTIONS: Wash and cube potatoes. Add to a large pot of salted cold water. Bring potatoes to a boil and cook until tender. In a large cup, add 4 scoops collagen protein powder to 1/2 cup water. Whisk until smooth and creamy. Set this aside. In a separate dutch oven or large pot, sauté dice bacon until crispy. Transfer bacon to another bowl, but keep the bacon fat in the pot. Now, add butter, diced onions and diced garlic cloves. Sauté on medium high heat until onions are clear and transparent. Reduce heat to medium low heat. Add 1 cup flour and stir to form a roux. I find it helpful to add 1/3 cup chicken stop as to not burn the flour. Once roux is formed, slowly whisk in the rest of the chicken stock and watered collagen protein powder. Now, whisk in cream, cheese, and sour cream. Add your drained and cooked potatoes to this pot. Using a potatoes masher, mash the potatoes in the soup to create a smooth yet chunky texture. Let this simmer on medium low heat for 10 minutes. Salt and pepper to taste. Serve with diced green onions, your already cooked crispy bacon and sharp cheddar cheese on top.

I added dried dill instead of fresh dill, added green zucchini, watermelon radish, fresh peeled butternut squash, carrots, turmeric, sea salt, onion, chicken, lots of celery, black pepper and fresh parsley. Boiled and simmered for at least three hours. After cooking, take out the parsley and radish, otherwise the soup will get dark and bitter when stored in the fridge. Boozy hot chocolate!!🥛🍫☃️ . INGREDIENTS • 2 cups milk • 3 ounces dark chocolate (chopped) • 2 teaspoons cinnamon • 4 teaspoons unsweetened cocoa powder • 2 tablespoons brown sugar • 3 (or more😉) tablespoons rum . DIRECTIONS 1. Heat up milk on stove until it starts to bubble 2. Reduce heat to low and add chocolate and cinnamon 3. Whisk until the chocolate is melted 4. HOMEMADE CHOCOLATE TART 🍫 • Only had a couple hours before meeting friends for dinner, so I wanted an easy recipe that wouldn't require too much prep either. This chocolate tart with a brown butter crust was perfect! A classic of French aperitifs ("apéro") and buffets.
